You will need:
Lemon Simple Syrup
- ½ cup sugar
- ½ cup water
- Zest of a lemon
Lemonade
- ½ cup freshly-squeezed lemon juice
- 1 cup coconut milk
- 2 ½ cups ice
Directions
- For simple syrup: Simmer sugar and water in a pan over medium heat. Stir occasionally. Then stir in lemon zest while removing from heat. Cover and steep for one hour, then strain through a sieve.
- For whipped lemonade: Add 1/2 cup simple syrup, coconut milk, lemon juice, and ice in a blender. Blend until mixture is slushy. Serve immediately.
Sparkling strawberry-ginger lemonade
This sweet treat has a big kick and will keep you refreshed all spring long.
You will need:
- 1 cup strawberries (hulled), plus sliced berries for garnish
- 1 bottle sparkling pink lemonade
- 2 bottles ginger beer
- Mint sprigs for garnish
Directions
- Add strawberries to a large glass measuring cup, then mash with a wooden spoon until juicy. Transfer to a fine-mesh strainer over a bowl, pressing firmly to get as much juice as possible.
- Combine the strawberry juice, ginger beer and lemonade in a large pitcher, then serve over ice.
- Garnish with berries and mint sprigs.
